Healthy and delicious goat milk pancakes

These pancakes not only look beautiful but they’re a great healthy breakfast for your toddler. They have no added sugar, are dairy free and can easily be made gluten or egg free. Just switch out the egg for 1 chia egg and choose a gluten-free flour such as buckwheat.

Recipe

Makes 20

  • 400ml water + 8 spoonsful Bubs Toddler Goat Milk
  • 50ml water (extra)
  • 1 egg (or 1 chia egg)
  • 1 tsp vanilla bean paste
  • 1 cup flour of your choice
  • 1 tsp baking powder
  • ½ cup blueberries, fresh or frozen
  • Coconut oil or butter, for frying

Step 1

Make up the formula, giving it a good whisk to make sure there are no lumps left. Then whisk in the extra water, egg and vanilla.

Step 2

Combine the flour and baking powder in a separate bowl. Then whisk in the formula mixture.

Step 3

Heat a non-stick frypan over medium heat and brush with a little coconut oil or butter. Drop level tablespoonsful of the pancake mixture into the pan. Then place 4 or 5 blueberries on each pancake. Cook for half a minute or until bubbles appear on the surface.

Step 4

Flip over and cook the other side for 1 minute until golden. Serve with coconut yoghurt and/or a little drizzle of maple syrup or for added protein serve with Bubs Strawberry, Pear & Quinoa.
